December 21 is a big day in several places in the Basque Country. In Bilbao and Donostia, for example, there will be special fairs and the streets will be filled with the smell of txistorra and people in traditional Basque dress. Of course, Basques in the Diaspora have also wanted to celebrate this special feast day different parts of the world. In New York’s Txikito restaurant txistorra and cider will be enjoyed and there will be a fair at the restaurant D.O. Denomination of Origin in Mexico City.

The Txikito restaurant, located in Manhattan's Chelsea neighborhood, has prepared a special menu for Santo Tomás for New Yorkers and Basques who pass by between December 19 and 21. Croquettes ajoarriero, talo with homemade txistorra and Tolosan beans will have a privileged place on the menu, with an abundance of cider and txakoli to drink.

The icing on the cake is a raffle for three piglets among 8 people who reserve tables.

In Mexico City, Pablo San Roman, from San Sebastian, wants to keep the tradition of Santo Tomas aloive at his restaurant D.O. Denominación de Origen.  He will be serving talo with txistorra and good wine, as well as organizing a traditional farmers market where vegetables, eggs, cheese, crafts, bread, oil and other products will be exhibited and sold.  As tradition dictates, a piglet will also be raffled in Mexico’s capital.
