Paola’s Vinum is “a typical bar from the Basque Country,” says Paola Pérez in conversation with EuskalKultura.com. “A place you can make your own.” Due to family reasons, the Bilbao native business-woman is moving to San Francisco and willing to sell this thriving wine and tapas place.
Chicago, IL, USA. “When I first moved to the States I missed having a bar that I could call my bar – the one you always go to, either with your friends or on your own,” explains Pérez. “And that’s what Paola’s Vinum is, your bar, a place you can make your own, with regular customers that simply want to have a glass of wine, or a late dinner, in a relaxing atmosphere.”
Getting a full-bar license in Chicago “is not easy at all –says she−. There are lots of restrictions. So what makes taking over Paola’s Vinum attractive is that I’m going to sell the business, along with the licenses and the stock.”
The West Loop neighborhood in Chicago is a growing area, thanks to the City Hall’s plan to expand the business district, and also because it is experiencing a rapid gentrification, where young families are moving to. That is why, in Pérez’s words, “the business is growing at a 10% rate per year.”
“People like good wine in the United States and I have a wide range of wines from the Basque Country, Spain, and other areas.” “I’m very proud of Paola’s Vinum,” finished the wine expert.
Currently she is in contact with three possible investors, but she would sell the bar to anybody with a good business plan.
